Special characteristic

Hand-picked and hand-selected grapes (maximum yield of 40 hectolitres per hectare). Gentle pressing followed by slow wild-yeast fermentation for several weeks in temperature-controlled stainless steel. Subsequent maturation on the lees until just before bottling, to add complexity and body.

Medium lemon. Generous nose of peach, apricot and exotic fruit. Beautiful texture on the palate, with a delicate glaze and a hint of creaminess. Yellow fruit expression but exceedingly fine.

Sourced from vines that were planted over 35 years ago on limestone-rich soils interspersed with gravel and iron oxide.
