Manual harvest in mid-September. Fermentation at a controlled temperature of 16°C. Subsequent maturation in barrel for six months on the fine lees.

Pale straw-yellow with green reflections. Intense, fine and characteristic varietal nose, with floral hints, fruity notes of yellow peach and lemon, and aromatic herbs. The palate is minerally, elegant, fresh and salty.

Sourced from vineyards situated 210 to 260 metres above sea level in the municipalities of Ortovero and Ranzo, where the stony calcareous soils are rich in microfossils.
