Special characteristic

Gentle pressing in a pneumatic press. Slow, temperature-controlled fermentation in 350- and 600-litre vessels (second- to sixth-use) for 90 days. Subsequent maturation, including malolactic fermentation, for 12 to 18 months on the fine lees with minimal bâtonnage (lees stirring). Only minimally filtered before bottling.

The nose shows rich, complex fruit, complemented by a beautiful mineral note. Full-bodied on the palate, with juicy depth and creamy minerality. Exceptionally balanced with fine concentration and breed.

Stony limestone with a proportion of loam.
