Hand-picked and hand-selected grapes. Gentle pressing followed by fermentation, malolactic fermentation and maturation in 66% first- and 33% second-use French oak barrels. Blending after 10 months with a further two years of bottle ageing before release.
Intense notes of preserved lemon, ripe apple and pear, complemented by honey, butter and fine roasted aromas. The palate has a fine, creamy, rich mouthfeel with focused acidity. Persistent finish with a slightly saline minerality as well as notes of lemon and cardamom.
Perched on a cool, exposed mountain top with meagre and infertile Franciscan shale soils, this 16-hectare estate is dry-farmed according to the principles of sustainable viticulture.
