Special characteristic

Gentle pressing in a pneumatic press. Slow, temperature-controlled fermentation in 350- and 600-litre vessels (second- to sixth-use) for 90 days. Subsequent maturation, including malolactic fermentation, for 12 to 18 months on the fine lees with minimal bâtonnage (lees stirring). Only minimally filtered before bottling.

Bourgogne Les Chataigners has a nose of lime, white blossom, and crisp green apple. Full-bodied, pure and minerally on the palate, with precise, vibrant acidity. This wine is an outstanding introduction to one of the best addresses on the Côte de Beaune.

Sourced from the 1.1-hectare lieu-dit Les Chataigners, where the soil is comprised of limestone, gravel, clay, loam and weathered limestone.
