Manual harvest followed by destemming and gentle pressing. The grapes spent four hours macerating on their skins before fermentation began in stainless steel vats. Natural fermentation took place at a controlled temperature of 16°C, triggered by wild yeasts native to the vineyard. Malolactic fermentation began of its own accord as soon as the alcoholic fermentation had finished. No filtering and no additives.

Can Sumoi La Rosa is a light, delicate, elegant wine. Ripe red fruit with floral notes on the nose. Cheerful and vibrant on the palate, with beautiful freshness culminating in a very long finish.

Gobelet-trained vines on clayey, calcareous soils at an altitude of 550 metres above sea level.
