Pisoni Estate releases only one Pinot Noir every year in September, two full years after the respective harvest. Picking takes place in the cold of night, as this helps to preserve full fruit expression. Only selected French oak barrels are used to mature the wine for one year in order to safeguard aromatic purity. This is followed by a further year of bottle ageing.
In der Nase dominieren zunächst rauchige Noten, Bitter-Schokolade und Leder, bis die dunkle Frucht sich ihren Weg bahnt: Brombeeren, Cranberries und schwarze Kirschen, florale Noten nach Rosenblättern und milde Gewürze wie Nelken runden die Duftaromen ab. Im Gaumen ist der Wein zupackend mit komplexer Struktur und hoher Dichte. Die Frucht zeigt sich vollreif. Tolle Struktur und Säure, welche ein grosses Alterungspotenzial garantieren.
