Selective manual harvest at the end of October. Fermentation at relatively cool temperatures of between 28 and 30°C. Subsequent maturation, including malolactic fermentation, for 14 months in Barrique and large French oak casks, with an additional month spent in stainless steel before bottling.
Ruby colour. On the nose, blackcurrant, blueberry, cherry and plum as well as hints of Mediterranean herbs and mint. Very fine tannins and balanced acidity on the palate. This elegant Etna Rosso has a dense body, fine tannins and a long, berry-inflected, mineral finish.
Sourced from a vineyard outside the town of Randazzo, with stony and very fertile volcanic soil. The vines – aged between 50 and 100 years – grow 600 to 650 metres above level and are gobelet-trained.
