Selective harvest. Wild-yeast fermentation followed by gentle pressing. Subsequent maturation, including malolactic fermentation, for 16 months in large French oak casks (holding 10 to 30 hectolitres), with an additional month spent in stainless steel before bottling and release.
Fresh nose of ripe red fruit and sweet spice, underscored by floral and herbal hints. Balanced and fresh on the palate, with fine minerality and a persistent and slightly spicy finish.
Sourced from five- to 50-year-old vines that grow on volcanic soil at elevations of between 600 and 1000 metres above sea level on the northern side of Mount Etna.
