Special characteristic

Selective harvest. Wild-yeast fermentation followed by gentle pressing. Subsequent maturation, including malolactic fermentation, for 16 months in large French oak casks (holding 10 to 30 hectolitres), with an additional month spent in stainless steel before bottling and release.

Intense ruby. Hints of ripe fruit with sweet spice and minerality. Wonderful balance on the palate between power, elegance and crispness. The tannins are assertive yet fine-grained and juicy.

Sourced from five- to 50-year-old vines that grow on volcanic soil at elevations of between 600 and 900 metres above sea level on the northern side of Mount Etna.
