Hand-picked and hand-selected grapes. Destemming followed by controlled maceration (skin contact) and subsequent fermentation for around four weeks – one part in temperature-controlled stainless steel, the other in large oak casks. Maturation for about 18 months in large oak casks and 228-litre Burgundian oak barrels, before bottling and subsequent release.
Deep ruby. Pronounced notes of dark fruit, cherry, dried flowers and spice on the nose. Extremely elegant mouthfeel. Fresh, linear and fruit-driven with delicate tannins and a long finish.
Le Mourre des Perdrix is a lieu-dit situated on a small plateau in the municipality of Courthézon. Its soils are a mixture of reddish loam, sandy marl and gravel.
