Hand-picked and hand-selected grapes. Destemming followed by a cold maceration ('cold soak'). Wild-yeast fermentation in concrete, accompanied by regular punch-downs of the grape skins. Subsequent pressing, then maturation in new and used French oak barrels, with a further 15 months of bottle ageing.
Pure, intense Cabernet notes of blackcurrant, blueberry, black cherry, and plum, along with violet, mint, menthol and Mediterranean herbs. On the palate, this is a fruit-driven red wine with juicy, vibrant acidity and fine tannins. The finish is long, with lots of fruit and a subtle hint of chocolate. Already a delight to drink but will continue to improve.
Sourced from vines sitting 1,250 metres above sea level on soils mainly composed of sand with minor elements of limestone and gravel.
