Selectively picked grapes. Cold maceration ('cold soak') lasting anything from 12 hours to three days, followed by gentle pressing. Subsequent wild-yeast fermentation in old oak casks and partially in temperature-controlled stainless steel. Maturation on the lees for body and complexity, then bottling in Spring.

On the nose, dominant ripe citrus aromas – grapefruit, lemon and orange – along with green apple and quince. Dry on the palate, with balanced acidity and a medium body. Appealing minerality and stone fruit characters on a persistent finish.

Sourced from the terraced slopes of Nackenheimer Rothenberg, where the terroir consists of massive red shale with a very thin layer of weathered topsoil.
