Gentle pressing of hand-picked grapes followed by slow fermentation in stainless steel.

Very expressive on the nose, with wonderful citrus aromas, pear, yellow fruit, thyme and a hint of almond. Minerally, full and concentrated on the palate, with racy acidity. Well-structured and elegant.

Grown on a very stony, calcareous soil referred to as caillottes.
