Gentle pressing in a pneumatic press. Slow, temperature-controlled fermentation in 350- and 600-litre vessels (second- to sixth-use) for 90 days. Subsequent maturation, including malolactic fermentation, for 12 to 18 months on the fine lees with minimal bâtonnage (lees stirring). Only minimally filtered before bottling.

Fine nose of peach, citrus, and exotic fruits. Spicy with subtle minerality. Delicate and silky on the palate, with a fine mineral note. Elegant and wonderfully balanced.

Sourced from the 1.25-hectare Clos de la Chatenière plot situated just up from the village of Puligny-Montrachet. Wines from Saint Aubin offer minerality and complexity.
