Low average yields and selective manual harvest. Wild-yeast fermentation in stainless steel vats. Then gentle pressing. Ten to eleven months on the fine lees for added complexity and creaminess. No filtering or fining.

Volz was a designated single vineyard until 1971. It is now situated within the boundaries of Wiltinger Braunfels, which lies adjacent to Scharzhofberg. The vines on this steep slate slope were planted around 60 years ago.
