Special characteristic

Selective manual harvest of immaculate grapes. Short period of maceration (skin contact) followed by gentle pressing. Slow wild-yeast fermentation lasting several weeks. Subsequent maturation on the fine lees in old and new Burgundian oak barrels (pièces) until April, with regular bâtonnage (lees stirring).

Pale gold. Concentrated on the nose, with ripe pome fruit, sweet melon, creamy, yeasty elements such as brioche and nuts, and fine minerality. Balanced mouthfeel with lots of creamy assertiveness, showing perfect interplay between primary and secondary characteristics. Long on the finish.
