Fermentation followed by blending of the constituent parts. Subsequent maturation for three years in large oak foudres (casks) that are continuously refilled to prevent a layer of yeast from forming.

Pale gold. Spicy on the nose, with tree nur and oxidative notes. Vibrant acidity and creamy texture on the palate, with aromas of apple, pear and blossom.

Fossil-bearing limestone.
