Weather permitting, the grapes are afforded long hang time and picked late. Otherwise, the fruit is left to dry after being harvested. Gewürztraminer, Riesling and Sauvignon Blanc grapes are mixed together and left for a week in wooden crates. Gentle pressing then follows, with subsequent fermentation and maturation partially in stainless steel and partially in small oak barrels.

Gold colour, with lovely intense fruit notes, a creamy, soft body, a long finish and beautifully refreshing, bracing acidity on the palate. This wine's fresh and youthful aromas and flavours will take on greater complexity with bottle age, gradually developing into subtle honey notes.

Fruit from various wineries in the heart of the traditional white wine area of Appiano Monte, cultivated at elevations of between 550 and 650 metres. The vines grow on exposed south- and south-east-facing slopes consisting of loamy limestone gravel, in immediate proximity to Sanct Valentin castle. They are aged between 10 and 18 years. Cool winds blow down from the mountains at night into the vineyards, helping to preserve acidity and aromas in the grapes.
