Temperature-controlled fermentation on the skins for about 18 days followed by maturation for 18 months in oak barrels (70% first-use, 30% second-use). The delicate structure of the 2018 vintage required very careful vinification. Fermentation was also a much more judicious, restrained affair.

Black berries and cherry on the nose, with woody notes, delicate herbal aromas and fine minerality. Succulent fruit, fine roasted nuances and a slight herbal reprise on the palate. Showing bite on a very good, juicy finish. This is a very serious, complex Pinot Noir.

Sourced from vines that were planted between 20 and 40 years ago in small terraced plots situated on a steep amphitheatre-shaped slope with a very favourable south-westerly aspect. Cistercian monks from Burgundy started planting vines here over 700 years ago, because the soil reminded them of the terroir on the Côte d'Or.
