Manual harvest. Destemming followed by a cold maceration ('cold soak'). Subsequent wild-yeast fermentation accompanied by regular punch-downs of the grape skins. Then gentle pressing in a pneumatic press, with maturation for 15 months in used French oak barrels.

Deep ruby. An abundance of dark berries and black cherry with hints of caramel and licorice on the nose. Lovely balance on the palate, featuring a reprise of ripe fruit as well as tobacco. A fresh and complex wine with firm tannins.

Sourced from vines sitting 1,250 metres above sea level on soils mainly composed of sand with minor elements of limestone and gravel.
