Hand-picked and hand-selected grapes. Destemming followed by a cold maceration ('cold soak'). Wild-yeast fermentation in stainless steel, accompanied by regular punch-downs of the grape skins. Subsequent pressing, then maturation in new French oak barrels, with a further 15 months of bottle ageing.
Deep ruby. Intense nose of dark berries and plums. Spicy notes on the palate. Juicy, supple and complex, with ripe fruit and fine roasted characters. Long-lasting finish.
Sourced from vines sitting 1,250 metres above sea level on soils mainly composed of sand with minor elements of limestone and gravel.
