Very selective manual harvest and a short period of maceration (skin contact) followed by pressing and overnight settling of the juice. No malolactic fermentation. Maturation on the fine lees for 11 months in oak barrels. Regular bâtonnage (lees stirring).
Fine aromas of citrus, peach and a hint of blackcurrant on the nose. Fresh and lively on the palate, with elegant minerality. A great Sauvignon Blanc.
