Sparkling wine

Sparkling wine refers to wine that bubbles when poured, because carbon dioxide has been held under pressure in the bottle. The Champagne method, which involves a second fermentation taking place in the bottle, is probably the best-known way to produce sparkling wine. Champagne is a protected name, but the method itself is used the world over.
