Das selektionierte Traubengut wird nach der späten manuellen Lese schonend gepresst. Anschliessend vergärt der Weissburgunder zu 50% im Barrique und 50% im grossen Eichenfass für ein Jahr. Daraufhin werden die beiden Weine assembliert und nochmals für 8 Monate im Stahltank ausgebaut.
Goldgelbe Farbe mit komplexen Aromen nach reifen Äpfeln, Zitronen, leicht gerösteten Mandeln, Vanille und frisch gebackene Croissants. Im Gaumen ist der Weissburgunder Vollmundig mit ordentlich Konzentration aber dennoch ausgewogen mit einem frischen langen Abgang.
Fruit from various wineries in the heart of the traditional white wine area of Appiano Monte, cultivated at elevations of between 450 and 600 metres. The vines grow on exposed south- and south-east-facing slopes consisting of loamy limestone gravel, in immediate proximity to Sanct Valentin castle. They are low-yielding and aged between 10 and 32 years. Cool winds blow down from the mountains at night into the vineyards, helping to preserve acidity and aromas in the grapes.
