Manual harvest on two different dates five days apart, picking into crates that hold no more than 15 kg. Immediate pressing in a vertical press. Static cold sedimentation for four days, with subsequent maturation for 10 months in 500-litre first-use French oak barrels.
Light green colour – pure and lustrous in appearance. Beautiful ripeness and depth on the nose, with good aromatic intensity. Fennel, ripe white fruit and an elegant mineral note. Full of character on the palate, with great intensity and presence. However, minerality keeps the ripe flavour profile in check and provides length to the finish.
Sourced from vines that grow 100 to 150 metres above sea level. The local soil is a type of red limestone referred to locally as call vermell. This wine is made exclusively from high-quality fruit.
