Hand-picked and hand-selected grapes (maximum yield of 40 hectolitres per hectare). Gentle pressing followed by slow wild-yeast fermentation for several weeks in temperature-controlled stainless steel. Subsequent maturation on the lees until just before bottling, to add complexity and body.
Apricot, freshly grated citrus zest, and herbs on the nose. Full-bodied attack. Firm, concentrated and elegant, with fine minerality and a delicate finish.
Sourced from vines that were planted over 35 years ago on limestone-rich soils interspersed with gravel and iron oxide.
