Stefan Winter laid the foundations for this special project during the 2008 harvest, inspired by his love for champagne and top-class German Sekt. Immaculate hand-picked fruit serves as the basis for this exceptional fizz. Since 2008, Stefan and his team have kept their best base wines back every year and matured them unfiltered on the lees in French oak tonneaux. At the end of 2015, they began the process of turning their first-ever blend of these base wines into Sekt. The cuvée matured on its lees in bottle according to the traditional Champagne method before its first disgorgement in 2018.
This Sekt is an unadulterated reflection of its terroir and the Burgundian grape varieties that went into the base wine. Dried apple and fine brioche on the nose. Lots of grip on the palate, with perfect interplay of fruit, minerality and yeasty notes lending complexity. pure owes its fine mousse and unfettered structure to a long period of ageing on the lees.
