Gentle pressing and controlled fermentation of fully ripe grapes that were manually and selectively harvested in October. Extended maturation on the lees for four months to ensure a particularly elegant balance between acidity, alcohol and sweetness.
In 2014, winemaker Jan Eymael planted 800 Roter Riesling vines in the Ungsteiner Herrenberg vineyard, which has carbonate-bearing, sandy loam soils.
